January 22, 2005 - Casey's Hill Benefit Dinner
The Underhill Town Hall was transformed into a fine restaurant on the evening of January 22, 2005. Delicate linens and elegant tableware graced the tables while whiffs of delicious food filled the air. Former chef Carolyn Gregson, whose culinary resume includes study at France’s renowned Le Cordon Bleu, created a fabulous three course winter-warming menu. Ninety six dinner guests gathered to enjoy an exceptional three course dinner that began with a delicate spinach and mushroom soufflé roll. This was followed by a main course of savory Chicken Marbella, a salad of organic mixed greens with subtle vinaigrette and fresh baked baguette bread. Dessert was an impressive Bouche de Noel, a deep chocolate cake roll with whipped cream and frosting.
The splendid swing jazz music of Ed Moore and his boys accompanied the dessert and continued well into the night with many diners joining in dance. This very special event was hosted by the Jericho Underhill Land Trust with all proceeds going to the purchase and conservation of Casey’s Hill, the popular and very scenic sledding hill.
JULT raised $3,000 this evening and wishes to thank Carolyn Gregson for her generous offer to prepare this splendid dinner, thank Healthy Living for donating many fresh food items for this meal and thank Ed Moore and his family for providing the soothing, memorable jazz that accented the night.
